Chickpea Flour Lemon Cookies

Instructions:

  1. To speed up the process, preheat the oven to 180°C (356°F).
  2. Add the sugar to softened butter (it can be slightly melted in the microwave). Mix well.
  3. Add the eggs and mix until smooth.
  4. Grate the lemon and add the zest to the dough. Squeeze juice from half a lemon.
  5. Add the chickpea flour and baking powder. Knead the dough. Leave it in the refrigerator for 30 minutes.
  6. Prepare a baking tray and line it with parchment paper.
  7. Pour the powdered sugar into a deep bowl. Take the dough out of the fridge.
  8. Form small balls (about 7 pieces) and roll them in powdered sugar.
  9. Place the formed cookies on the tray and bake for 20-25 minutes at 180°C (356°F).
  10. The cookies are ready to serve.
