Chickpea Flour Lemon Cookies

- To speed up the process, preheat the oven to 180°C (356°F).
- Add the sugar to softened butter (it can be slightly melted in the microwave). Mix well.
- Add the eggs and mix until smooth.
- Grate the lemon and add the zest to the dough. Squeeze juice from half a lemon.
- Add the chickpea flour and baking powder. Knead the dough. Leave it in the refrigerator for 30 minutes.
- Prepare a baking tray and line it with parchment paper.
- Pour the powdered sugar into a deep bowl. Take the dough out of the fridge.
- Form small balls (about 7 pieces) and roll them in powdered sugar.
- Place the formed cookies on the tray and bake for 20-25 minutes at 180°C (356°F).
- The cookies are ready to serve.
