Zucchini Cream Soup
This broth-based vegetable soup always saves me when I don't know what to cook for dinner. It is delicious, nutritious, and also gluten-free, without milk and lactose-free, low in histamine, which is very important for our home kitchen. The recipe is quite simple, but the result is always excellent.
Ingredients:
Instructions:
1. Peel and chop the onion into large pieces.
2. Do the same with the carrots.
3. Take a pot, add oil for frying.
4. Fry the onion and carrots over medium heat for 15 minutes.
5. Peel and chop the potatoes into large pieces and add to the pot. Add salt and spices to taste.
6. Fry for another 10 minutes.
7. Chop the zucchini and add to the pot. Fry for another 10 minutes.
8. Add 500 ml of water or broth to the vegetables.
9. Cook for another 25 minutes.
10. Blend the soup with a blender until smooth.
