- Grate the ginger on a fine grater and chop the green onion.
- Finely chop the shrimp into a mince-like texture, then add the ginger and onion. Add the sesame oil, crack in one egg, and season with salt and pepper to taste. Mix everything thoroughly.
- Cut the rice paper sheets in half. Prepare a wide plate with water. Dip half of the rice paper into the water for a few seconds until it softens. Place the filling in the center of the paper and fold the edges to form a dumpling. Repeat with the remaining dumplings. Place the formed dumplings into an air fryer or a preheated pan.
- Beat the second egg. Brush the top of each dumpling with the egg for a golden crust during frying.
- Fry the dumplings in the air fryer at 180°C (350°F) for 15 minutes or on the pan for 15 minutes until golden brown.
