Instructions:

  1. Grate the ginger on a fine grater and chop the green onion.
  2. Finely chop the shrimp into a mince-like texture, then add the ginger and onion. Add the sesame oil, crack in one egg, and season with salt and pepper to taste. Mix everything thoroughly.
  3. Cut the rice paper sheets in half. Prepare a wide plate with water. Dip half of the rice paper into the water for a few seconds until it softens. Place the filling in the center of the paper and fold the edges to form a dumpling. Repeat with the remaining dumplings. Place the formed dumplings into an air fryer or a preheated pan.
  4. Beat the second egg. Brush the top of each dumpling with the egg for a golden crust during frying.
  5. Fry the dumplings in the air fryer at 180°C (350°F) for 15 minutes or on the pan for 15 minutes until golden brown.
